Safari cant select specific words or strings of words for Copy. Instead, you hold your finger down on some text (as you would in other apps to trigger the magnifying loupe) and the entire paragraph of text is selected (everything within the P, and perhaps DIV and other similar containers).

Articles and such are formatted with <br /> tags and such, so trying to select text in Mobile Safari will give you the entire article most likely rather than just a single paragraph.
