Cowboy Bebop is almost always the safest recommendation I can make. However, most people have usually seen it, so it's generally not a very helpful recommendation.

Evangelion might be my favorite anime, but I recognize it's extremely polarizing so it's usually not the best recommendation. The individual seasons of Ghost in the Shell: Stand Alone Complex would fit that criteria, but I'd heavily recommend both seasons because they're both amazing, but that would be 52 episodes total instead of 26 for each season. And Eureka Seven is also over the episode limit at 50.

Hell if I remember all the anime I've seen.

I've seen Eureka Seven though. I saw parts of Ghost In The Shell, I didn't really like it.
Death Note I saw.
I also saw Evangelion.

Well, like I said, Bebop should be a solid choice if you haven't seen it. Trigun is good too, but I think it's definitely not as good as Bebop.

That doesn't always hold. Evangelion is my favorite anime and Eureka Seven is in a tie for 2nd with both Ghost in the Shell: SAC Seasons, and I think Big O is very "meh." Like, maybe 6.5/10 or so. >_>

There are animes with <20 episodes? Didn't know those existed.

I saw Outlaw Star years ago when it run on Toonami, that show was fucking awesome.

Based on a recommendation from a friend (Before all these posts here) about Excel Saga, so I started watching it.
...I can't make heads or tails of that show, but it's still fucking funny.

There's TONS of anime with less than twenty episodes. Serial Experiment Lain, Spice and Wolf, Rozen Maiden, Now and Then Here and There, Ninja Scroll, Magical Lyrical Girl Nanoha, Paranoia Agent, AIR, Tales of Symphonia, Hellsing (original one at least), Disgaea, Xenosaga, Full Metal Panic Fumoffu... Goes on and on.

Oh, I also recommend Higurashi if you don't mind extreme violence in anime form.

Having seen three whole anime series, I am now an expert on the genre.

I saw the first episode, and read a summary on Wikipedia on Serial Experiments Lain.
I probably won't like it. I'm not really a fan of the "Fuck with the watchers mind" genre.

I got fed up withj Excel Saga after episode 7 >.>

I mentioned it drags on. Getting fed up with Excel herself is one way it drags on <.<

And I can't actually recommend sticking with the series if fed up, as overall it isn't actually worth it >.>

Yeah, I stopped watching lol
I just skipped to Episode 26, which I heard was worse (Sense wise) then the rest of the series. And it's true, it made even LESS sense.
